Probably because we can't effectively track restricted countries for each game provider. This is stated in the casino's rules or the chat operator should advise.

The same goes for the payment options, I'm quite sure.

How about asking the game provider directly what countries are restricted ? Alternatively, if you are playing in a specific casino you should check the Terms and Conditions or ask the support if games are restricted for players from Australia. 

See used to be able to play PG soft games in my casino at Joe Casino and at Jackpot Jill but then they stopped allowing I went onto other casinos that have them such as bitstar even with a VPN you still just cannot play how do they pick up Even? If you use a VPN that’s what I can’t understand.

If these game providers have restricted Australia, then I understand why you can't play and it seems like the only logical explanation. 

As for the VPN, if you can use it, then I'm not sure how a block works or what's behind not being able to play them, because you should be allowed to play games. 

If you play at BitStarz casino, have you tried asking them directly how it is possible that even with a VPN it is not allowed to play games at this provider ? I guess you'd find out something relevant. I haven't come across any cases where it doesn't work if you use a VPN, so it would be good to know why that is.
