I noticed that any winnings from a bonus stay locked and can’t be withdrawn right away. Why do casinos do this, and what usually needs to be completed before the balance becomes available? Trying to understand how it works.

You need to complete the wagering of the bonus. It is always written in the terms of every bonus, actually.
